How to disable Java in Safari depends on the version of the browser. If you use Safari 6.1 or a newer version, there is a switch in the preferences that allows you to enable or disable Java.
  1. To do this, go to the top of the menu bar on "Safari > Settings" and select the tab "Security".
  2. Here you can now disable Java by going to the plugin settings and turn off Java there on the left in the list.
If you use an older version of Safari go very similar.

In the plugin settings you can see all installed plugins and make settings to them and enable or disable them. Mostly, the Adobe Flash plugin is also displayed here, which is used to play videos in the browser or other web content such as games. If you don't trust Flash players, you can disable this as well.
