You can change the language on the Surface Pro 6 just like you would on Windows 10.

1. The first thing you need to do is navigate to the settings. To do this, either enter the word "Settings" in the search bar at the bottom left, or tap on the small Windows icon and then on the cogwheel.
2. In the settings, continue to "Time and Language" and then "Language" in the menu on the left.
3. Here you can now set the language of the Windows system. To do this, simply click on the "Add language" button and select the language you want to switch to.
4. Click the language and then click "Next". Now check that the option "Install language pack and use as display language" is checked.
