• You can only manually realize the optimal shift times at any time. This always depends on the situation: Do you need grip, for example, it is good to shift up early in the lower gears. The automatic, on the other hand, does not recognize such necessities and always works the same.
• Also the fuel consumption and the wear on tires and engine can be controlled better manually, because the speed range affects all these factors.
• In addition, you can use the gear shift to brake by shifting down sharply at high speed. This sets the engine braking - this is extremely effective, if well implemented, but also requires a lot of skill.

Last but not least, it is a question of realism for real F1 fans. In real Formula 1, after all, manual shifting is also used - so forgoing this driving aid in F1 2019 falls into the same category as traction control, ABS and co.
