Nel 2000 ha preso parte alla serie tv Kiss Me Kate e a seguire altre apparizioni in Wild West, Linda Green, Holby City, Doctors, L’ispettore Barnaby, sempre ruoli marginali. Con il passare del tempo la sua presenza va in crescendo. Lo troviamo in una coppia di episodi della quinta stagione di The Walking Dead. Chi lo ricorda? Ancora altri episodi di Messiah: The Promise e poi quattro puntate di No Angels, un po’ ironico perché poi diventerà il diavolo. Tom Ellis ha partecipato anche ini EastEnders, Doctor Who, The Passion e Monday Monday.
Solo nel 2009 arriva a far parte in maniera stabile del cast fisso di Miranda, una sitcom televisiva britannica andata in onda sulla BBC dal 2009 al 2015, Ellis ha il ruolo dello chef Gary Preston. Nel 2010 recita nel cast di Merlin, una popolare serie tv inglese, approdata qualche tempo dopo su Italia 1. Serie in cui vengono narrate le avventure del giovane mago Merlino, interpretato da Colin Morgan e dove Ellis interpreta il Re Cenred, dalla terza stagione in poi.
